This is a party-sized pre-mixed which is loaded with essence of a Christmas time, rendering it perfect for a festive gathering. Reserve the remaining citrus syrup for breakfast cocktails, puddings, or to make more rounds of the drink.
Bikini Recipe
Serves 10 people
Ingredients for the Clementine Cordial (produces 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g granulated sugar
Ingredients for the Cocktail (produces 850ml, serving 10)
400ml decent vodka
100ml classic gin
150ml peach-flavored liqueur
200ml citrus syrup (from the recipe above)
A few cranberries, as a garnish
Mandarin essential oil, to finish
Method
To prepare the Syrup: Put the listed items into a pan, bring to a gentle boil, mixing so the sugar melts. Next, take off the heat and leave to cool fully. Pour to a sterilised bottle, cap it and store in the refrigerator, it can be stored for up to four weeks.
Preparing the Cocktail Base: Pour every spirits and syrup into one big jug, leave to sit for an hour, then strain best through a fine cloth, so it's fully clarified.
When ready to serve: Measure 85ml of the batch mix into a cocktail shaker filled with ice, and stir carefully for a minute until cold. Pour into an cold coupe glass or equivalent, decorate with a few cranberries and finish using a brief mist of mandarin oil over the drink.
